Naankhatai Macarons recipe

DISH OF THE DAY - Nankhatai Macarons

Naankhatai Macarons
Ingredients: FOR NAANKHATAI:
Butter 1/2 cup
Powdered sugar 1/2 cup
Refined flour 1 cup
Salt a pinch
Semolina(sooji) 1 tablespoon
Roasted besan 1 tablespoon
Baking soda 1/4 teaspoon
Cardamom powder 1/4 teaspoon
Chopped pistachio 8-10 number

FOR FILLING:
Hung curd 1/2 cup
Chilli flakes 1 teaspoon
Chopped basil 1 teaspoon
Chopped mint 1 teaspoon
Fine chop olives 1/2 teaspoon
salt to taste
Fine chopped fried garlic 1/2 teaspoon

METHOD OF PREPARATION

1. In a large bowl mix half a cup of room temperature butter, to this add 1/2 cup of powdered sugar and beat for 5-10 minutes until smooth and creamy consistency formed.


2. Now add refined flour, semolina(sooji), cardamom powder, salt, baking powder and roasted besan to butter and sugar creamed mixture. Mix well with the help of spatula.

3. Once it is properly mixed, knead it to the soft dough like consistency. Do not over knead the dough as the refined flour will release gluten.

4.Divide the dough into small portion balls and flattern it with your palm. make sure the size of naan khatai should be small.

5. Now place chopped pistachio on top of each naankhatai and gently press them.

6. Now place naankhatai on a baking tray and bake in a preheated oven at 180 degree Celsius for 15 to 20 minutes.

7. Meanwhile in a bowl combine Hung curd, chilli flakes, chopped basil, chopped mint, fine chop olives, salt and mix it properly. Transfer this mixture into a piping bag and place in refrigerator to chill.

8. Once the naankhatai is baked take them out and cool down completely.

9. Now take one piece of naankhatai and pipe the hung curd mixture in the centre. Place another naankhatai on top and press lightly.

serve with hot Tea and Coffee.
