Cauliflower Pasta, the newest kid on the block!

That unique dish is none other than Cauliflower Pasta. Trust me; this dish has the power to turn your hate to love, for cauliflower.

Serves: 2-3 people


First step:- Take a sheet pan, add chopped cauliflower and six skin-on garlic cloves with some olive oil, pepper,salt, and red chile flakes. Roast at 425° for about 20-30 minutes. Toss it occasionally, until the cauliflower is brown and crisp. This mixture should taste nutty and delicious. If it doesn’t,  sprinkle little bit olive oil with some more tiny garlic pieces and a pinch of salt, if needed. Once the mixture cools down, peel the roasted garlic cloves.


Second step:-  Meanwhile, take a pot and boil the salted water and cook a pound of short pasta .Drain the pasta once cooked and add some pasta water to mix it well,(Use quarter cup to add pasta water). Stir together the hot pasta with the cauliflower, garlic clove, veggies & greens, lemon juice, fresh herbs , and enough pasta water to mix it all together. Garnish with a handful of freshly torn parsley leaves.

Dash some feta cheese on top for a tangy, creamy taste.
Substitute the herbs for different fresh or spicy flavors. Tarragon, parsley, or thyme would all be excellent choice.
Sprinkle some bread crumbs for a little crispy texture.
