A Swiss chocolatier named Barry Callebaut came to the rescue here and came up with a formula for an entirely new treat called “ruby chocolate.” The chocolate variety has a pinkish red hue and has a sweet and sour taste that you don’t usually expect from a chocolate. This uncommon treat is supposed to have less of the usual cocoa taste without any crazy genetic modification and is created with an existing type of cocoa bean that is processed before fermentation. 
It has already seen widespread testing in Japan and South Korea and will be hitting shelves in the UK soon in the form of a special KitKat.

The new method wows children and adults alike. It also removes the need for a freezer, which means less of a carbon footprint and lower energy costs for the franchisee. 
The process mainly involves using liquid nitrogen to freeze whatever flavor ingredients you desire. Then you just mix it properly as it freezes to get that ultimate creamy consistency.

A rise in people following veganism is motivating a number of major brands to launch vegan-friendly versions of their signature products. One such example is ‘Cornetto’ that released their vegan ice cream cones.
Early into 2017, Cornetto announced that it would be launching the Cornetto Veggy in Italy and now, the product is set to be available in the UK. The dairy-free ice product boasts a soy-based ice cream that is placed in a gluten-free cone lined with chocolate that is topped with nuts and even more chocolate.
During the last year, other big-name ice cream brands like Ben & Jerry's and Häagen-Dazs released their own vegan ice cream products as a means of satisfying the demand for more plant-based options.
